📝A Rich, Aromatic Buttermilk Bun with a Double-Cardamom Filling
There are some recipes that fill your kitchen with an aroma so irresistible that everyone starts wandering toward the oven to see what’s baking. These Green & Black Cardamom Buns are definitely one of them.
Made with a soft buttermilk dough, a generous layer of butter, and a fragrant cardamom-sugar filling, these buns are a beautiful twist on the traditional sweet roll. The combination of green and black cardamom creates a wonderfully complex flavor. Green cardamom brings a bright, floral, slightly citrusy character, while black cardamom adds a deeper, warmer, smoky note. Together, they make every spiral of these buns incredibly aromatic.
What makes this recipe especially indulgent is what happens just before the buns go into the oven. Once the rolls have risen in the baking dish, room-temperature heavy cream is poured over the entire batch. As the buns bake, the cream works its way around the rolls, helping create an exceptionally rich and tender result while the tops turn beautifully golden brown.
And just look at those spirals! Baked together in a 9 × 13-inch Pyrex baking dish, the buns rise against one another, creating a gorgeous pull-apart presentation that’s perfect for a weekend breakfast, brunch, afternoon coffee, or a special homemade dessert.
🌿The Cardamom Makes the Difference
The heart of this recipe is the cardamom. Instead of simply adding a little spice to the dough, the cardamom is freshly ground and combined with icing sugar to create the filling.
For the best flavor, grind the black and green cardamom together into a fine powder before mixing them thoroughly with the icing sugar. Freshly ground cardamom releases its aromatic oils, giving the finished buns an incredible fragrance.
The filling is then spread over a generous layer of soft butter on the rolled-out dough. When everything is gently rolled into a log and sliced, you get those beautiful spirals of buttery, sweet, aromatic cardamom throughout every bun.

Green & Black Cardamom Buns Recipe
Buttermilk Dough
- 2–3 teaspoons active dry yeast
- 4 tablespoons sugar
- 1 teaspoon salt
- 2 cups buttermilk, room temperature
- 5–6 cups all-purpose flour
Prepare the buttermilk dough as usual and allow it to rise for approximately 1 hour, or until nicely risen.
Cardamom Filling
- 1 pound butter, softened
- 3 cups icing sugar
- 4 black cardamom pods
- 2 tablespoons green cardamom
- 1 quart heavy cream, room temperature
Prepare the Cardamom Sugar
Combine the black and green cardamom and grind them into a fine powder. Add the ground cardamom to the icing sugar and mix thoroughly.
Assemble the Buns
- Roll the risen dough into a rectangle. Don’t roll it too thin, as the dough needs enough strength to hold the filling and roll without tearing.
- Spread 1 pound of softened butter evenly over the surface of the dough.
- Sprinkle the cardamom-sugar mixture evenly over the butter.
- Gently roll the dough and filling into a log.
- Cut the log into 1–2-inch pieces.
- Generously butter a 9 × 13-inch Pyrex baking dish and arrange the buns inside.
- Allow the buns to rise for approximately 1 hour.
- Preheat your oven to 350°F.
- Once the buns have risen, gently pour 1 quart of room-temperature heavy cream over the buns.
- Place the baking dish immediately into the oven. For easier cleanup and to help prevent any possible bubbling over, place the baking dish on a cookie sheet.
- Bake for approximately 30–45 minutes, depending on your oven and altitude, until the buns are beautifully golden brown.
Allow them to cool slightly before serving—but don’t wait too long! These buns are at their most tempting while they’re still warm and fragrant.
